Greek Salad Wrap

No measuring required for this Greek Salad Wrap! Dice your veggies and whip up an easy homemade dressing to make this easy lunch recipe any day of the week. To save time, use pre-cooked canned chickpeas!



  • romaine lettuce, chopped
  • dill & mint, roughly chopped
  • persian cucumbers, diced
  • cherry tomatoes, diced
  • radish, diced
  • kalamata olives, halved
  • scallion, finely chopped
  • feta, crumbled
  • cooked chickpeas,
  • tortilla of choice,


  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 5 tablespoons olive oil
  • 1/ 2 teaspoon salt
  • pepper
  • 1 teaspoon dried oregano
  • 1 small clove garlic
  • drizzle of honey or maple syrup, optional


  • Step 1

    In a bowl, combine romaine, dill, mint, cucumber, tomato, olive, scallion, feta, and chickpeas.

  • Step 2

    In another bowl, whisk together dressing ingredients.

  • Step 3

    Pour some dressing over salad and toss well. Taste and adjust for seasoning.

  • Step 4

    Spread olive tapenade over the tortilla. pour salad over the tortilla and wrap tightly. If you want, you can press it in a heated lightly oiled pan to seal the wrap. Cut in half and enjoy:)
