Tomato Mozzarella Tarts

"Tomato Tarts made easy with the help of @sweetisthespice organic spice blends. I used the Herbal Fusion and Chicago Joe spice blends that gave these tarts amazing flavor. Lots of fresh tasting herbs, garlic and ground peppercorns. I also used puff pastry (which is wonderful for savory dishes too,) and freshly shredded mozzarella cheese. With the bounty of in season tomatoes, make these tarts as an appetizer or serve with a protein and fresh salad. "

Ingredients:

1 10 inch sheet homemade or store-bought puff pastry

1 cup mozzarella, shredded

5 vine tomatoes, sliced

@sweetisthespice organic spice blend or a blend of flaky sea salt, black, white and pink pepper, to taste

1 tbsp olive oil

2 garlic cloves, minced

Directions

Preheat the oven to 400˚ F and line a sheet pan with parchment paper. Place the puff pastry on the sheet and a top with the shredded cheese.

Add the tomatoes to a large bowl and toss them with the olive oil, spice blend and garlic. 

Layer the tomatoes on top of the cheese, then place in the oven.  Bake for about 25 minutes or until golden brown.
