"Blueberry Super Food Cake and Contest A hot day calls for a cool treat. I made this delicious dessert from blueberries, blackberries, and maca. The crust is made from seeds, oats, cacao, spirulina, and sweetened with dates. We loved it! ? I love using whole food ingredients in my recipes. I especially love incorporating dates to replace refined sugar. I thought it would be fun to see your creations that are sweetened with dates. So, I'm hosting a little date creation party. RECIPE:

Crust Ingredients

Double Chocolate Oat Crust
1 3/4 c rolled oats
3 T cocoa powder/cacao powder
1/4-1/2 c chocolate chips or cacao nibs
1/2 c sunflower seed
butter or almond butter
1/4 t spirulina (optional)
2 T date water
1 c dates

Directions
1. Soak dates in hot water for 10 minutes. Save soaking water.
2. Place oats, cocoa powder, spirulina, and chocolate chips into a food processor. Pulse until coarse.
3. Add soaked dates , date water, and seed/nut butter to the food processor. Mix until sticky and a well blended dough forms.
4. Take dough and press into two mini spring form pans. You will have extra dough. With the extra crust, you can make little energy bites. Roll dough into balls. I use a small cookie scoop.
5. Place spring form pans into the freezer while you make the filling.

Filling Ingredients
1 C blueberries, frozen
1/2 C black berries
1 12 oz. package of silken tofu
2 T sunflower seeds (soaked 2 hours) or use full fat coconut cream.
1 t maca (optional)
1/2 C maple syrup or rice syrup

Directions

1. Add all ingredients into a high powered blender. Mix until creamy.
2. Add filling to crust and place into freezer for 3-4 hours. Thaw before eating. Enjoy!
