Chocolate Chip Baked Oats with Almond Butter

  • 1/ 2 cup rolled oats
  • 2/ 3 cup almond milk
  • 1/ 2 banana
  • 1 tablespoon chia seeds
  • 1 scoop vanilla protein
  • Pinch sea salt
  • 1 teaspoon vanilla
  • Cinnamon, to taste
  • 1 teaspoon baking powder
  • 1/ 4 cup mini chocolate chips, and more for topping


  • Step 1

    Preheat oven to 400ºF

  • Step 2

    In a medium bowl, mash banana with a fork, add in all other ingredients and stir in chocolate chips.

  • Step 3

    Pour batter into a greased ramekin, top with more chocolate chips, and bake for 20-25 minutes or until center just set and does not widdle when shaken. Top with nut butter (used maple caramel almond butter) and pour some almond milk to taste.
