- 2 package Alexia Sunrise Baby Potatoes Rosemary and Garlic
- 1 cup assorted bell peppers, seeded and diced
- 2 scallions, sliced
- 6 large eggs
- Kosher salt and pepper, to taste
Method
Step 1
Preheat oven to 425F degrees.
Step 2
Grease a baking sheet pan with cooking spray. Add two packs of Alexia Sunrise Baby Potatoes Rosemary and Garlic and bake for 20 minutes.
Step 3
Using a glass, press down on the potatoes to smash them. Scatter the diced bell peppers and scallions. Bake for an additonal 5 minutes.
Step 4
Add eggs and season with salt and pepper, bake for 4 minutes or until eggs are set.
Step 5
Remove from oven and serve immediately.
