Vegetarian, Dinner, Good For A Crowd
I adore these paneer and cauliflower kabobs by @supperwithmichelle. Ideal on a buffet and so pretty, nice as a vegetarian entree but perfectly paired with a grilled sirloin steak. Yummy!

Paneer And Cauliflower Kabobs

For the kabobs (roughly):
2 cups of Cauliflower Florets
8 oz of paneer(cubed)
1 Small Onion (cubed)
1 small Bell Pepper (cubed)
1 - 2 Tablespoons of Tomato Achaar Sauce(thin with 1 tbsp of water)

Directions:
Mix all together (let sit for at least 30 minutes) and then placed randomly on skewers.

Bake on a baking sheet at 400 degrees for 20 minutes flipping after 10 minutes. I also placed the skewers under the broiler for a few minutes to get a little extra charing. But in the warm months, place on your grill, and grill for 5-10 minutes on each side or until done.

For the cucumber sauce mix:
1/2 of one cucumber (that I grated and rung out with a towel)
3/4 cup of sour cream
Squeeze of lime juice
Salt and Pepper to taste

Serve over Basmati rice with fresh Cilantro and a squeeze of lime.
