ingredients

  • 1/4 pound red and purple potatoes
  • 6 large eggs
  • 3/4 cup half-and-half milk
  • Dried herbs, such as oregano or parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup shredded sharp cheddar cheese

Method

  • Step 1

    Preheat oven to 400°F.

  • Step 2

    Bake red and purple potatoes drizzled with a little olive oil in a cast-iron for 30-40 minutes at 400°F or until soft enough to smash. Smash potatoes using the bottom a glass.

  • Step 3

    Whisk eggs with dried herbs, garlic powder, onion powder, milk, salt and pepper.

  • Step 4

    Turn the oven down to 375 degrees. Then pour your egg mixture on top with a good sprinkle of cheese and baked for another 20-30 minutes or until golden on top.
