Serves 4

Ingredients:

2 cups of freshly sliced strawberries
3 cups of cubed watermelon
1 cucumber, peeled
1 cup of freshly diced tomatoes
1 jalapeno, deseeded and diced
1/2 a lime juiced
1/2 cup of purple onion
1/3 cup cup of chopped basil
2 tbsp mint
3/4 tsp + 1/8 tsp sea salt
1/4 tsp pepper
1 1/2  tbsp of red wine vinegar
1/4 cup olive oil

Method:

Chop onion and run it under hot water for 30 sec and then cold water for 30 sec to take the bite out of it.  

Slice jalapeño in half, deseed it, and chop into small pieces.  Prepare the rest of your ingredients.  

Place strawberries and watermelon in a blender and puree.  Add everything up until the olive oil and blend until everything is well incorporated and smooth.  

Slowly add in olive oil and blend until well mixed.  

Chill mixture and stir before serving.  

Serve topped with a  drizzle of olive oil and sprinkle of salt and pepper with some chopped berries or tomatoes.
