Quinoa Tabbouleh Avocado Boats With Spicy Tahini Sauce

Quinoa Tabbouleh:
2 cups cooked quinoa
1 cucumber diced
1 1/2 cups diced tomatoes
3 green onions chopped
1/2 cup finely chopped kale
1 1/2 cups parsley, finely chopped
3 tbsp chopped mint
3 tbsp hemp seed
Dressing:
1/4 cup lemon juice
1 clove garlic minced
1/3 cup olive oil
11/2 tsp sea salt
1/2 tsp pepper
1/8 tsp Berbere spice blend
Cook quinoa according to directions on package. Whisk together dressing ingredients in a small bowl and pour over quinoa stirring well. Add the rest of the chopped ingredients and mix well. Taste and adjust seasonings if necessary. It will taste better the longer it sits.
Spicy Tahini Sauce:
1/4 cup tahini
1 1/2 tbsp freshly squeezed lemon juice
3 tbsp water
1/4 plus 1/8 tsp Berbere spice
1/4 tsp sea salt
Mix above ingredients well in blender. Taste and adjust spices.
Cut the avocado boats in half and put a dollop of hummus in bottom. Then top with tabbouleh and some crunchy chickpeas. Drizzle with tahini sauce. Enjoy!
