Spiced Banana Oatmeal "Muffin" Cookies

"Anyone remember the Muffies from Panera? Shout out to my bro, he could throw back quite a few of the chocolate chip ones. Well, the texture of these goodies reminds me of that muffin cookie hybrid: the appearance of a cookie with the soft fluffy inside of a muffin. So I’m calling them SPICED BANANA OATMEAL MUFFIES. ingredients

  • 2 bananas
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1 cup oats
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves, optional
  • 1/4 teaspoon nutmeg, optional

Method

  • Step 1

    Preheat oven to 350℉.

  • Step 2

    In a large bowl, mash bananas. Then, stir in the honey and vanilla extract.

  • Step 3

    Stir in coconut flour, oats, baking soda, baking powder, and spices.

  • Step 4

    Form large (1 1/2 - 2 tablespoon) balls of dough and place on a lined baking sheet.

  • Step 5

    Flatten and shape the cookies, since they don't spread as they bake.

  • Step 6

    Bake for 15 minutes (until they start to brown around the edges).

  • Step 7

    ENJOY these cookies for dessert, breakfast, or lunch! Store in the fridge for up to 5 days or freeze them.
