ingredients
- 2 bananas
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1 cup oats
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves, optional
- 1/4 teaspoon nutmeg, optional
Method
Step 1
Preheat oven to 350℉.
Step 2
In a large bowl, mash bananas. Then, stir in the honey and vanilla extract.
Step 3
Stir in coconut flour, oats, baking soda, baking powder, and spices.
Step 4
Form large (1 1/2 - 2 tablespoon) balls of dough and place on a lined baking sheet.
Step 5
Flatten and shape the cookies, since they don't spread as they bake.
Step 6
Bake for 15 minutes (until they start to brown around the edges).
Step 7
ENJOY these cookies for dessert, breakfast, or lunch! Store in the fridge for up to 5 days or freeze them.
