"One of my all time favorite summer desserts is blackberry cobbler. And it gets about a million times more delicious when you pick the blackberries yourself. And then if you make homemade ice cream to go on top well then you're just out doing yourself. I can’t lie these mini pies here were made with blackberries from the store. I was craving blackberry cobbler and the blackberries are not ripe for picking yet. But I could not wait so I went ahead and made these mini cobblers to tide me over until I can pick my own. And you better believe I will be making a giant blackberry cobbler and homemade vanilla ice cream to go on top! #feedfeed #blackberry #cobbler "

Serves 4


INGREDIENTS
1 tablespoons cornstarch
½ cup sugar, divided
2 cups fresh blackberries
3 tablespoons butter, softened
1 large eggs
1/2 cups all-purpose flour
1/2 teaspoons baking powder
3 oz sour cream
1/8 teaspoon baking soda


DIRECTIONS
Preheat oven to 350°F.

Stir together cornstarch and 1/4 cup sugar. Toss berries with cornstarch mixture, and spoon into 4 lightly greased mini cast iron skillets.

Beat butter at medium speed with an electric mixer until fluffy; gradually add remaining sugar, beating well. Add egg.

Combine flour and baking powder. Stir together sour cream and baking soda. Add flour mixture to butter mixture, add sour cream mixture to butter mixture.. Beat at low speed just until blended. Spoon batter over berry mixture.

Bake at for 17-22 minutes or until a wooden pick inserted in center of cobblers topping comes out clean.
