ingredients
- 1 teaspoon olive oil
- 1 yellow onion, chopped
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 box pho broth
- 2 scallions, chopped
- 2 cups bok choy
- 1 cup rice noodles
- 1 lime, sliced into wedges
- 1 teaspoon Kosher salt
- 2 cups bean sprouts
- 1/2 cup mint leaves
- 1/2 cup cilantro
- 1 tablespoon soy sauce
Method
Step 1
In a large pot over medium-high heat, add olive oil and cook onions, carrots and celery until softened, 5 minutes. Add pho broth and simmer for 10 minutes.
Step 2
Add half of the scallions, bok choy and rice noodles, simmer 5 minutes. Squeeze one lime wedge into the soup. Season with salt.
Step 3
While your Pho is simmering, prepare bowls with a cup of bean sprouts. Add Pho to your bowl, and garnish with mint, cilantro, scallions, lime wedges and soy sauce.
