For the Noodle Salad:
ingredients
- 6 ounces rice noodles
- 2 cups thinly sliced romaine lettuce
- 1/2 cup sliced radishes
- 1/2 cup thinly sliced carrots
- 1/2 cup thinly sliced cucumbers
- 1/2 cup thinly sliced scallions
- 1/2 cup torn mint leaves
- 1/4 cup torn cilantro leaves
- 1 jalapeño, diced and used to your preference
- 2 tablespoons Annie's Organic Sesame Ginger Vinaigrette
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon fish sauce
- 1 tablespoon sesame seeds
For the Noodle Salad:
Method
Step 1
Cook noodles according to package instructions and rinse with cold water. Drain and add noodles to a large bowl.
Step 2
While the noodles cook, stir together the dressing, lime juice, and fish sauce. Add sauce to rinsed and drained noodles and toss to coat.
Step 3
Add vegetables, herbs, and diced jalapeño (to taste) to the noodles and toss. Refrigerate while you prepare the tahini sauce and salmon.
For the Tahini Sauce:

- 2 tablespoons Annie's Organic Sesame Ginger Vinaigrette
- 2 tablespoons tahini
- 2 tablespoons water
- 1 teaspoon soy sauce
For the Tahini Sauce:
Step 1
Combine all ingredients in a small bowl and stir to combine. Set aside.
For the Salmon:
ingredients
- 4 (4 ounce) salmon filets
- Sea salt, To Taste
- 1 tablespoon Annie's Organic Sesame Ginger Vinaigrette
- 3 tablespoons brown sugar
For the Salmon:
Step 1
Arrange oven rack to 6-inches from broiler element. Preheat broiler. Line a baking sheet with foil.
Step 2
Place salmon filets on foil. Sprinkle lightly with salt.
Step 3
In a small bowl, stir together dressing and brown sugar. Spoon glaze over salmon filets and spread evenly.
Step 4
Broil salmon to desired doneness - about 5 minutes for thin filets and 7 minutes for thicker filets - watching closely as it broils.
To Serve:
Step 1
Divide salad among 4 pasta bowls. Top with salmon filets. Drizzle with tahini sauce and sprinkle with sesame seeds. Serve immediately.
