"K I M C H I, avo, red cabbage, carrot, cucumber and sprout rice paper rolls Kimchi is a traditional cabbage based Korean dish which is fermented by probiotic lactic acid bacteria. Mention the word "probiotic" and it immediately brings products like yoghurt or Yakult to mind. However, fermented products like Kimchi and Sauerkraut are being re-discovered in the Western world for their probiotic benefits. Probiotic products contain live bacteria - some of which survives digestion and can have a beneficial effect on the friendly bacteria living in the digestive system. Clinical evidence currently links probiotics most strongly for the treatment of diarrhoea but suggests they have potential benefits in treating irritable bowel syndrome and supporting immune health. More recently (and interestingly!) studies are linking certain probiotics to psychiatric and psychological benefits. "

Recipe Intro From sprout.dietetics

A refreshing dish of rice paper rolls filled with vegetables and kimchi.

Makes 20 Rolls


INGREDIENTS
2 sliced red capsicums
1/2 sliced cucumber
1 sliced avocado
1/4 red cabbage sliced
3 sliced carrots
1/4 c of kimchi
2 cups of sliced snowpeas
Optional: 2 fried eggs sliced into slithers
20 sheets of rice paper
1/2 c coriander


DIRECTIONS
Once all the vegetables are chopped placed about 1/2 cup of them on one end (in the middle) of a wet rice paper roll. Add kimchi or eggs as desired. 

Fold the two sides of the rice paper roll in towards the middle and then roll up the rice paper roll. Serve with a side of fresh tamari sauce!
