Heirloom Tomato And Herb Eggs

Ingredients:

1 large heirloom tomato

2 tbsp butter

3-4 eggs

fresh herbs

Directions:

1. Thinly slice a large heirloom tomato. I placed mine in the fridge for a few hours so it would firm up - for easy slicing.
2. Place cast iron pan on medium high heat. Add butter (I know, I know, it's a lot) and when it is hot and bubbly, add sliced tomatoes. Do not stir.
3. After 45 seconds, add cracked eggs to the pan. I don't whisk the eggs. I break the yolks with the tip of my spatula. Stir eggs gently, without disturbing the tomatoes. Add chopped fresh coriander.
4. Once the egg mixture starts to bubble, and the eggs towards the side of the pan look firm, place pan under the broiler for a minute.
5. Adorn with fresh herbs, cherry tomatoes and eat with sourdough bread.
