You can never go wrong with a little full-fat coconut milk (very important – it makes for the richest, most flavorful curry!), curry paste, ginger, garlic, lots of veggies (including butternut squash!), herbs, and NOODLES. And crispy tofu if that’s your jam! (I’ve also included the recipe for my fave crispy tofu in the notes of the recipe!) 🙌🏻
