Move over, chia pudding! This creamy, gluten-free parfait from @spicedharvest is made with West African fonio and both coconut milk and cream, then layered with maple or honey-drenched peanuts and bites of juicy peach. This dish is perfect for breakfast or dessert. Dig in!
- 1 cup uncooked Fonio Grain
- 1 cup Coconut Milk
- 1 cup Coconut Cream
- 1 cup crushed Peanuts
- 5 tablespoons Honey or maple syrup
- 1 small Granny Smith Apple or ripe peach
In a small bowl, mix the fonio grain and coconut milk and cover tightly with a lid and pop in a microwave for 10 minutes. Or boil in the coconut milk for 10 minutes until sticky.
Take out, let cool and add in the coconut cream. Mix thoroughly until you get a slightly thick paste
In another bowl, mix the crushed peanuts and honey until it is sticky.
Chop the apple or peach into small bite size cubes.
Layer the Fonio mix in a parfait glass with peanut mix and diced fruit.
Top with more apple or peach and serve.
