Puttanesca Sauce with Shrimp

  • 3 tablespoons olive oil
  • 1 small onion, chopped
  • Red pepper flakes, to taste
  • 1 4 ounce jar capers plus their juice
  • 3/4 cup halved black or kalamata olives
  • 1 28 ounce can Red Gold Whole Tomatoes
  • 1 10 ounce can Tomate Love diced tomatoes with green chilies
  • 2 teaspoons anchovy paste or 3 minced anchovies
  • 1/4 cup chopped fresh parsley
  • Kosher salt, to taste
  • 1 teaspoon sugar (optional)
  • 1 pound cleaned raw shrimp, tails removed
  • 12 ounces spaghetti or linguine

Method

  • Step 1

    In a medium-sized pot, heat your olive oil. Once hot add in your onions and saute for 5 minutes.

  • Step 2

    Add in garlic and red pepper flakes and saute another minute.

  • Step 3

    Add in capers and their juice and stir to combine.

  • Step 4

    Add in tomatoes, and using a potato masher carefully break up the tomatoes a bit (alternatively you can crush them a bit with your clean hands or masher prior to adding).

  • Step 5

    Add in anchovy paste/anchovy, parsley, salt and sugar. Stir to combine and bring to a simmer.

  • Step 6

    Simmer for 10-15 minutes.

  • Step 7

    Add in shrimp and simmer for a few minutes until they are cooked through.

  • Step 8

    Taste and adjust seasoning if necessary.
