Chicken Lettuce Wraps
ingredients
- 1 pound ground chicken
- 2 tablespoon peanut oil
- 1/2 minced sweet onion
- 1 cup diced red or green pepper
- 1 (8oz) minced can water chestnuts drained
- lettuce of your choice
- crushed peanuts for serving
Method
Step 1
Whisk together all of the sauce ingredients. Set aside.
Step 2
Heat 2TBS of peanut oil in a frying pan. Once hot, add ground chicken.
Step 3
Once ground chicken starts to brown, add onion and cook until translucent (about 5 minutes).
Step 4
Add peppers and water chestnuts and cook until peppers become soft.
Step 5
Add sauce, making sure the chicken and vegetables are evenly coated. Continue to cook on low until heated through.
Step 6
You can serve over lettuce (I use butter or romaine) or you can create a lettuce wrap bowl by placing wrap filling over rice or noodles!

ingredients
- 3 tablespoon soy sauce
- 3 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 2 teaspoon sweet chili sauce
- 1/2 teaspoon garlic powder
