8 slices of bread of choice 
8 slices of cheddar cheese
Butter, as needed

For the Tuna Salad:
2 cans of tuna, drained
1/2 cup mayonnaise
1 small yellow onion, diced
2 tbsp chopped pickles
1 teaspoon of lemon juice
Salt and pepper, to taste


For the Pesto Oil:
3 tbsp olive oil
1 teaspoon green pesto
1 tablespoon chopped fresh basil

Toppings
Pickled jalapeno
Sliced ​​tomatoes
A few drops of Tabasco

Directions:

Mix all ingredients for the tuna salad in a bowl. Mix all ingrediens for the pesto oil in
another.

Build each sandwich as follows: Spread a layer of tuna salad on one of two bread slices.
Top with pesto oil, toppings of choice and two slices of cheese. Place the second slice of bread
on top.

In a heavy-bottomed skillet, add a knob of butter and let melt. Fry each sandwich in lots of butter on medium heat until golden brown.
