Inspired by one of the best, most classic grilled cheese sandwiches, the Croque Monsieur, these breakfast crepes are filled with Gruyere, ham and Dijon mustard.

Ingredients

Crêpes, gluten free:

4 eggs

3 tbsp almond flour

1 tbsp psyllium husk

0.5 tsp salt

1 1/4 cups milk

 

Filling:

8 slices of ham

100 g Gruyère cheese

2 tbsp Dijon mustard

1 small red onion, chopped

 

Cheese sauce:

3/4 cups milk

3/4 cup grated cheese

0.5 tbsp corn flour

Salt and pepper

 

Method

To make the pancake batter, mix together the eggs with the dry ingredients. Add milk while whisking until you get a smooth and even batter. Set aside and allow to swell for a while. 

To make the cheese sauce, heat a saucepan, add the milk. Add the cheese, salt and pepper and stir until the cheese has melted properly. Then add the corn flour and mix to desired consistency.

Heat a frying pan, add butter. Make 8 small pancakes, one at a time. Once you have turned the pancake the first time, add the ham, a little Dijon mustard, Gruyere and chopped red onion while the other side cooks.

Fold the finished pancakes in the pan carefully and move to a plate. Pour the cheese sauce over and decorate with some fresh herbs if you like.
