Cheesy Chickpea Chilli Toasted Sandwich

Good For A Crowd, Easy, Vegan
Chickpea Chilli:
1 can Chickpeas, rinsed
3 tbsp tomato paste
1-2 tsp siracha
1 tbsp maple syrup
1 tsp onion flakes
1 tsp cumin
1 tsp thyme
Salt & pepper
Heat in a non-stick pan and set aside.
Nacho Cheese:
2 medium potatoes, chopped and boiled
1 orange pepper, chopped and boiled
1 cup soy milk
1 tbsp Dijon mustard
1 tbsp onion powder
1 tsp garlic powder
1c nutritional yeast
1 tbsp coconut sugar
3 tsp arrowroot flour
salt & pepper
Blend on high speed and then heat over a medjum-high heat in a saucepan. Be sure to keep stirring until thick and then remove from heat.
Just toast some bread & Assemble your sandwiches as pictured! I added avocado for extra deliciousness!
You could essentially use vegan store bought cheese, but I prefer making my own as its lower in saturated fats!
Enjoy! Store left over cheese in fridge and just reheat whenever you need!
