I’ve made those gingerbread pancakes and they are THE perfect Christmas breakfast you can make this year. Trust me on this one- I promise everyone will love them 😍🎈."

ingredients

  • 1 banana
  • 2 large eggs
  • 1 tablespoon molasses
  • 2 tablespoons coconut flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • Pinch of salt

Method

  • Step 1

    Combine all ingredients in a high-speed blender and blend until everything is combined. Leave the batter to rest for 10-12 minutes.

  • Step 2

    Heat a nonstick skillet over medium heat. Spray pan with cooking spray if necessary. Scoop 1/4 cup of batter for each pancake. Cook for 2-3 minutes on each side.

  • Step 3

    Top pancakes with nut butter, honey and fresh fruit (optional).
