For the Shortcut Pastry
- 1/ 2 cup all purpose flour
- 1/ 4 cup sugar
- 1/ 2 teaspoon salt
- 7 tablespoons unsalted butter, cubed
- 2 tablespoons cold water
For the Filling
- 4 nectarines, thinly sliced
- 1/ 2 cup sugar
- 1 egg
- Sea salt, for serving
- Vanilla ice cream, for serving
Mix flour, sugar and salt in a food processor. Add butter and pulse quickly until it becomes a dough. Add water if needed. Wrap in plastic wrap/foil and refrigerate for 30 minutes.
Preheat oven to 350ºF. Put baking sheet on a baking pan and place your dough in the middle, using a rolling pin, make the dough big and round about 1/3 inch thick. Layer nectarines in the center of the dough, overlapping. Fold over the excess dough on the sides of the nectarines, it does not matter if its not perfect, it should look rustic!
Whisk the egg with a fork and brush the dough with the beaten egg. Sprinkle with sugar, both on the nectarines and dough. Bake for 15-20 minutes, check the dough, when its golden its done! Serve with vanilla ice cream.
