Recipe Card

ingredients

  • 2 cups butter, at room temperature
  • 3 cups packed light brown sugar
  • 6 large eggs
  • 1 lemon
  • 1 tablespoon plus 1 teaspoon Watkins Organic Original Gourmet Baking Vanilla
  • 2 teaspoons Watkins Organic Ground Cinnamon
  • 1/2 teaspoon Watkins Organic Ground Nutmeg
  • 4 1/2 cups plus 1 teaspoon all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 3 cups of dates, pitted and chopped
  • 1 1/2 cups chopped toasted pecans
  • 1 1/2 cups chopped toasted walnuts

Method

  • Step 1

    Preheat the oven to 275 degrees F. Prepare a standard 10-inch bundt pan by spraying with nonstick spray and dusting lightly with all-purpose flour. Tap the pan to remove any excess flour. Set aside.

  • Step 2

    Using a stand mixer fitted with the paddle attachment, beat on medium speed, mix together the butter and brown sugar, until creamy and smooth.

  • Step 3

    Slowly add in the 6 eggs one at a time, scraping the bowl well between each egg, followed by the lemon juice, and Watkins organic original gourmet baking vanilla extract.

  • Step 4

    Adjust the mixer speed to low and add in the Watkins organic ground cinnamon, Watkins organic ground nutmeg, all-purpose flour, baking powder, and salt. Mix until combined. The mixture will be thick.

  • Step 5

    Turn off the mixer and use a wooden spoon to stir in the dates, pecans, and walnuts.

  • Step 6

    Pour the cake batter into the prepared bundt pan. Smooth out the batter in the pan to make sure it’s even or bang it on the counter a few times to remove any air bubbles.

  • Step 7

    Place into the oven to bake for 2 1/2 to 3 hours, until a cake tester comes out clean.

  • Step 8

    Allow the cake to cool in the pan for 10 to 15 minutes before removing the cake from the pan completely. Let cool completely.

  • Step 9

    Serve at room temperature. Store any leftovers in an airtight container at room temperature for up to 5 days.
