Fruity Granola Breakfast Tarts

  • 1 1/2 cups rolled oats
  • 1 cup raw almonds, finely chopped
  • 4 tablespoons coconut oil, melted
  • 1/4 cup pure maple syrup, honey or agave
  • Pinch of ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 cup lemon yogurt, or any flavor you like (for vegan or dairy free use appropriate yogurt)
  • Fresh assorted berries, for garnish


  • Step 1

    Preheat oven to 350F. Grease 3 - 4 small tart tins with removable bottoms. Set aside.

  • Step 2

    In a mixing bowl, toss together oats and almonds until combined. Add in the maple syrup, cinnamon, coconut oil, vanilla and toss until the dry ingredients are coated.

  • Step 3

    Divide the granola mixture evenly between the small tart tins, pressing the granola firmly into bottoms and up the sides of the tart tins. Then place the pans on a foil lined baking tray.

  • Step 4

    Bake for 20 minutes, until the granola is nice and browned and toasted on top. Transfer tart tins to a baking rack. Let cool to room temperature.

  • Step 5

    Carefully remove the tarts from the tins, fill with each tart with yogurt and garnish with berries.
