ingredients

  • 1/2 cup vegan butter, melted
  • 1/3 cup maple syrup
  • 1/3 cup cane sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 cup unbleached bread flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 chocolate bar, roughly chopped
  • 1/4 cup pretzel pieces

Method

  • Step 1

    Preheat oven to 350º F. Line a baking sheet with parchment paper.

  • Step 2

    In a large mixing bowl, add the butter, maple syrup, cane sugar, and vanilla. Beat using a hand mixer or whisk by hand until combined.

  • Step 3

    In a separate bowl, whisk together flour, salt and baking soda. Fold into the wet mixture 1/2 at a time until just combined.

  • Step 4

    Fold in chopped chocolate and pretzels. Scoop cookie dough onto baking sheet and press the dough down slightly if desired.

  • Step 5

    Bake for 12-13 minutes and remove from oven to cool.
