- 6 medium ripe tomatoes
- 1 English cucumber, cut into pieces
- 1 red pepper, cored and cut into pieces
- 1/4 cup fresh parsley
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 1 garlic cloves
- 1/8 medium red onion
- Salt and pepper to taste
