Andalusia Gazpacho

"Transitional Andalusia gazpacho recipes typically include stale bread, but I found without it the cold soup is still very tasty. I added quite some parsley for the fresh flavor and its health benefits."

  • 6 medium ripe tomatoes
  • 1 English cucumber, cut into pieces
  • 1 red pepper, cored and cut into pieces
  • 1/4 cup fresh parsley
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 garlic cloves
  • 1/8 medium red onion
  • Salt and pepper to taste


  • Step 1

    Blend all ingredients together in a high power blender or Vitamix until smooth.
