Vegetarian Ciabatta Sandwich with Roasted Garlic Sauce

ingredients
- 1 small garlic bulb
- 1 tsp olive oil
- 1/2 cup mayo
- 1 tbsp lemon juice
- 1 sliced zucchini
- 1 sliced red bell pepper
- 1 sliced portobello mushroom
- 1 sliced yellow onion
- 1 tbsp olive oil
- 1 tsp salt
- 6 oz mozzarella
- 1 Handful arugula
- 1 ciabatta loaf
Method
Step 1
Heat the oven to 425°F.
Step 2
Slice the top of the garlic bulb and remove excess the outer skin (there will still be some around the cloves). Drizzle with olive oil, wrap in aluminum foil and place in the oven for 40 minutes.
Step 3
Slice up the zucchini, pepper, onion, and mushroom. Toss with olive oil and salt. Place vegetables on a parchment paper lined baking sheet and add it to the oven for 25 minutes.
Step 4
Add the roasted veggies to the ciabatta bread, top with slices of mozzarella. Place back in the oven for 5-7 minutes or until the mozzarella is melted and the bread is slightly toasted.
Step 5
In a small bowl or food processor, mix the garlic with the mayo and lemon juice. Add it to the sandwich, top with some greens, and serve.
