Squash Enchiladas
ingredients
- avocado oil spray
- 2 tbsp avocado oil
- 1/2 red onion, thinly sliced
- 4 cups diced butternut squash
- 1/4 cup water
- 1 Siete Mild Taco Seasoning
- 1 package Siete Grain Free Cassava Tortillas
- 1 Siete Red Enchilada Sauce

- 1 fresh avocado, diced
- toasted sesame seeds
Method
Step 1
Preheat the oven to 350°F/180°C and spray a large oven safe dish with avocado spray.
Step 2
Heat a skillet over medium heat and sauté sliced onions in avocado oil until translucent.
Step 3
Add squash and cook for 10-15 minutes. Add ¼ cup of water and Siete Taco Seasoning.
Step 4
Mix thoroughly and cook until squash is tender.
Step 5
Warm each tortilla according to the package instructions.
Step 6
Fill each tortilla with the squash filling and roll. Place filled tortillas in the oven-safe dish.
Step 7
Top with Siete Red Enchilada Sauce and bake uncovered for 20 mins.
Step 8
Garnish squash enchiladas with sour cream or yogurt, diced avocado, and toasted sesame seeds.
