Spicy Meatballs

ingredients

  • 1 pound grass-fed ground beef
  • 1 package Siete Spicy Taco Seasoning
  • 1/4 cup flaxseed meal
  • 2 tablespoons arrowroot starch
  • 3 tablespoons avocado oil
  • 1 Jar Siete Red Enchilada Sauce
  • 12 fluid ounce water or beef broth
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 cup fresh chopped parsley, to serve

Method

  • Step 1

    Combine beef, taco seasoning, flaxseed meal, and arrowroot starch. Form 12 meatballs.

  • Step 2

    Add 3 tablespoons of avocado oil to a skillet over medium heat. Add all the meatballs and sear on all sides.

  • Step 3

    Lower heat to medium-low and add enchilada sauce, water or broth, basil, and oregano. Bring to a simmer and cover for 15 mins or until meatballs are fully cooked. (Skim excess oil if needed.)

  • Step 4

    Garnish with fresh parsley.

  • Step 5

    Serve with roasted potatoes or pasta.
