ingredients

  • 4 6 oz salmon fillets
  • 1 tbsp dried oregano
  • to taste salt and pepper
  • 2 cloves of garlic, thinly sliced
  • 3 tbsp avocado oil
  • 1/4 cup green olives, minced
  • 2 tbsp capers
  • 1 Jar Siete Red Enchilada Sauce
  • 3 tbsp parsley, minced

Method

  • Step 1

    Preheat the oven to 350°F/180°C. Add oil to a cast-iron skillet over medium heat.

  • Step 2

    Season each salmon filet with oregano, salt, and pepper.

  • Step 3

    Sear one side of each salmon until golden brown and set aside.

  • Step 4

    Add garlic, green olives, and capers into the pan. Sauté for 10-15 seconds and add enchilada sauce. Bring to a simmer.

  • Step 5

    Add salmon fillets back into the pan and bake for 10-12 minutes or until cooked through.

  • Step 6

    Garnish with fresh parsley.
