ingredients
- 1 pound sirloin steak
- 4 tbsp avocado oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow onion, thinly sliced
- 2 garlic cloves
- 1 tbsp water
- 8 ounces bella (cremini) mushrooms, thinly sliced
- 1 package Siete Grain Free Cassava Tortillas
- 1 Jar Dairy Free Spicy Blanco Queso
- parsley, to garnish
Method
Step 1
Thinly slice the sirloin steak and set aside. Heat a medium-sized cast iron skillet over medium-high.
Step 2
Add 2 tbsp of avocado oil and then add steak.
Step 3
Cook steak over medium-high heat. Add bell peppers and sauté with steak for 2-3 minutes. Remove everything from the skillet and set aside.
Step 4
Using the same skillet, add garlic and onions. Lower the temperature to medium-low to caramelize onions (about 10-15 minutes).
Step 5
Add 1 tbsp of water while onions are cooking to help caramelize.
Step 6
Once caramelized, add in beef and peppers.
Step 7
Heat a separate skillet over medium heat. Add 2 tbsp of avocado oil and sauté mushrooms until golden.
Step 8
Season with salt and pepper. Set aside.
Step 9
Heat 4 cassava tortillas in a clean skillet until pliable.
Step 10
Fill tortillas with beef, peppers and onions.
Step 11
Drizzle each taco with 1 tablespoon warm Dairy Free Spicy Blanco Cashew Queso.
Step 12
Garnish with sautéed mushrooms and fresh parsley.
