ingredients

  • 1 cup cashew nuts
  • 2 tbsp nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 2 tbsp extra virgin olive oil
  • 1 pound ground turkey
  • 3 Siete Burrito Size Tortillas
  • 2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • salt and pepper, to taste
  • 1 can tomato sauce
  • 1/2 cup water
  • 2 cups water
  • 1 cup cashews
  • 1 teaspoon nutmeg
  • 1/2 teaspoon sea salt

Method

  • Step 1

    For the vegan parmesan: Pulse the cashew nuts, nutritional yeast, garlic powder, and salt in a food processor and set aside.

  • Step 2

    Preheat the oven to 375°F/190°C. Add the olive oil and ground turkey to a skillet over medium heat.

  • Step 3

    Cook until golden, using a wooden spoon to stir and break up the ground turkey

  • Step 4

    Add the garlic powder, onion powder, oregano, basil, red flakes, salt, pepper, and cook together for 3-5 minutes.

  • Step 5

    Add the tomato sauce and ½ cup of water and bring to a slow simmer for 15-20 minutes.

  • Step 6

    In the meanwhile, blend all the ingredients for the white sauce in a food processor until smooth.

  • Step 7

    Pour into a small saucepan and bring to a simmer. Stir constantly to avoid burning. Cook until the sauce thickens to a gravy consistency.

  • Step 8

    To assemble: Spray an 8x10-inch baking dish and spread the bottom of the dish with 3-4 tablespoons of white sauce.

  • Step 9

    Cut about 1 inch off each side of the tortilla to fit the dish. Divide the white sauce and meat sauce into three equal parts.

  • Step 10

    Layer tortilla with one part white sauce, one part meat sauce, and about 1-2 tablespoons of vegan parmesan. Repeat the process using about 3 tortillas in total.

  • Step 11

    Spray the final layer with cooking spray and bake for 40 minutes. Let cool to cool for 30 minutes before slicing.
