ingredients
Baked Tortilla Chips
- 8 Grain Free Almond Flour Tortillas
- 1 tbsp avocado oil
- 1/2 cups salsa verde

- 4 fried eggs
- 1 avocado, diced
- 1 Roma tomato
- 1/2 cup black beans
- 3 tbsp red onion, chopped
- 2 tbsp cilantro, chopped
Method
Step 1
Preheat oven to 400°F/200°C and line a baking sheet with parchment paper.
Step 2
Slice the tortillas into eight triangles. Place each triangle on the baking sheet and brush both sides with avocado oil. Sprinkle with sea salt. Place in oven and bake until golden brown (about 10 minutes).
Step 3
Heat a skillet over medium heat and add salsa verde.
Step 4
Raise heat to medium-high and bring to a simmer. Remove from heat and add in the baked tortilla chips.
Step 5
Toss to coat the tortillas, cover and let sit for 2-5 minutes.
Step 6
Serve with fried eggs, avocado, tomato, black beans, red onion and cilantro!
