Mushroom Quinoa Medley

RECIPE:

Ingredients (I use all organic) -1/4 cup red quinoa dry -1 t sea salt (more if you prefer) -1 tsp lemon pepper (more if you prefer) -10 mini portobello mushrooms diced -15 fresh green beans -3 T plain 0% fat Greek yogurt

Directions -Steam green beans and mushrooms -Cook quinoa according to directions on bag/box -Add greek yogurt, sea salt, lemon pepper, diced steamed mushrooms, and quinoa together….mix -Place steamed green beans on top and crack some sea salt over top for a final touch .

Notes -Add grilled shrimp or chicken on top for some extra protein -Double or triple the recipe for additional servings
