Bhindi - Curried Okra

650 grams okra
3 medium sized onions
3 cloves garlic
2 cm fresh ginger
1 tsp cumin seeds
1 black cardamom pod
2 small pieces of cinnamon sticks
½ tsp turmeric powder
1 tsp red chili powder or flakes
1 tsp ground coriander
1 tsp salt
1 tsp mustard seeds
1 tsp nigella seeds
2/3 cup chopped tomatoes ¼ cup water


Make a paste with the garlic and ginger and set aside. Cut the okra and fry it for about three minutes in oil, set aside. Cut the onions into slices and fry until they turn golden and are about to brown. To the onions add the paste made from the garlic and ginger, along with all the spices. Fry this on medium heat for a minute then add the chopped tomatoes. Fry this until the oil starts to separate then add the water and the fried okra. Let this simmer until the okra is done and garnish with fresh coriander or green chilies and eat with roti/chapatti/naan bread. Enjoy!
