Salmon

ingredients

  • 1/2 pound salmon
  • olive oil
  • salt
  • garlic powder
  • chili lime seasoning

Avocado Salsa

ingredients

  • 1 avocado
  • fresh herbs
  • olive oil
  • lemon
  • sea salt

Method

  • Step 1

    First, lets set up your salmon. Grab 1lb or so wild salmon, cut into desired portions, then rub with olive or avocado oil. Then season with sea salt, garlic powder to taste (about 1 tsp), chile lime seasoning or tajin (about 1 tsp), and fennel or South African smoke seasoning if desired. Both chile lime seasoning and South African smoke can be purchased at Trader Joe’s. Let sit for 15-30 mins to really soak up the flavors.

  • Step 2

    Bake, pan fry, or air fry salmon to desired temp. I airfry at 400F for about 10-12 mins. Time varies by air fryer and thickness of your salmon, so play around and find what works best for you.

  • Step 3

    For the bangin avocado salsa (I have others on ShredHappens if you want to scroll back and find them), grab a bowl, then add 1 avocado cut into chunks, about 3-5 tablespoons of fresh herbs (i used a tablespoon or so of fresh dill, fresh tarragon, and fresh chives), zest from 1 medium lemon, juice from half a lemon, 1 to 2 tablespoons olive oil (higher the quality, the better), 1/3 cup feta, 1/4 cup roasted walnuts, sea salt + pepper to taste. Give it a mix and add whatever more you like. If you like spicy, add some fresh chilis or pepper flakes.

  • Step 4

    Once your salmon is ready, plate it up, then top liberally with salsa.
