ingredients
Filling
- 10 peeled chopped apples
- 1/2 cup cane sugar
- 2 tablespoon butter
- 1 tablespoon lemon juice
- 1 pinch salt
- 2 tablespoon bobs red mill gluten free flour
- 1 tablespoon apple cider
- 1 tablespoon white wine
- 1/4 teaspoon all spice
- 3 cinnamon sticks
- 1/4 teaspoon grated ginger
Method
Filling
Step 1
Preheat oven to 350. Melt butter in cast iron skillet. Add sugar and stir to combine. Cook on medium-low until golden.
Step 2
Add apples, and toss to coat in sugar mixture. Apples will cook down plenty, so don't worry if the pan seems full. Add lemon juice, and cinnamon sticks. Simmer, stirring frequently until apples have softened and liquid reduces a little.
Step 3
Remove cinnamon sticks. Add all spice, and ginger. Add flour, and fold to coat apples.
Step 4
Add cider, and wine. Simmer for 3-5 minutes, and turn off heat. Cover apples with crumble. (it will feel like a lot of crumble.. That's good! It soaks up residual liquid, and creates a cake like binding between all the nooks of the apples.)
Step 5
Bake for 35-45 minutes, until golden brown. Allow to cool for 15 minutes, and top with maple butter whipped cream.

- 3/4 cup bobs red mill all purpose gluten free flour
- 1/4 cup packed brown sugar
- 1 tablespoon cane sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger powder
- 1/4 teaspoon baking powder
- 5 tablespoon cold and cut into cubes butter
- 1/4 teaspoon all spice
- 1 package metaball energy bites, apple crisp
Crisp topping
Step 1
Add dry ingredients together in a bowl.
Step 2
Use food processor to process metaball bites (if you don't have these, skip this step)
Step 3
Add metaball bites to dry ingredients. Add butter cubes, and transfer back to food processor. Process.
Step 4
**If you SKIPPED metaball bites, at this point- add 1/3 c. old fashioned rolled oats.** fold together.
Step 5
Set aside until ready to use.

Maple butter whipped cream
- 1/2 cup cold heavy whipping cream
- 1 1/2 teaspoon powdered sugar
- 1/2 teaspoon vanilla extract
- 2 teaspoon maple butter (from trader joes)

Step 1
Add all ingredients to a cold bowl.
Step 2
Use hand mixer on medium-high until stiff peaks form.
Step 3
Chill in fridge until ready to use.
