Salmon and bacon

ingredients

  • 1 pound salmon, cut into thirds
  • salt and pepper, to taste
  • 3 tablespoons butter
  • 3 strips turkey bacon (or regular!)

Method

  • Step 1

    Preheat oven to 350. Pat salmon dry, and season with salt and pepper.

  • Step 2

    Pat salmon dry, season with salt and pepper. Place 1 tbs. of butter on each piece.

  • Step 3

    Bake for about 7-10 minutes, until salmon has cooked through to desired cook.

  • Step 4

    Place bacons strips on a baking sheet, and bake for 7-10 minutes until desired level of crisp is reached. Set both aside until ready to use. If you don't want to cook bacon, bacon bits are totally acceptable replacement!

Garlic aioli

ingredients

  • 1 cup mayo
  • 4 cloves garlic, crushed finely
  • 1/4 teaspoon fresh black pepper
  • 1/2 teaspoon kosher salt
  • 1/2 lemon, juiced and zested

  • Step 1

    Combine all ingredients, and whisk together well. Place covered in fridge for at least 30 minutes before using.

Marinated tomatoes

ingredients

  • 1 cup sliced cherry tomatoes
  • 1/4 cup chopped basil
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • salt and pepper, to taste

  • Step 1

    Combine all ingredients in a bowl, cover for at least 30 minutes.

  • Step 2

    Taste and adjust salt and pepper as needed.

Croutons

ingredients

  • 1 gluten free sub bun (or desired bread)
  • 1/2 tablespoon olive oil
  • salt and pepper, to taste

  • Step 1

    Cut bun (or bread) into 1/2" cubes, place on baking sheet and toss with salt, pepper, and oil.

  • Step 2

    Bake @ 350 for about 10-15 minutes, tossing halfway through. Check frequently to avoid burning,. Allow to cool before using.

Salad and assembly

ingredients

  • 1 1/2 cups chopped spinach
  • 1 chopped endive
  • 1 tablespoon chopped fresh mint
  • 1/2 tablespoon fresh thyme leaves

Salad and assembly

  • Step 1

    Combine herbs and spinach in a bowl with endive (optional, use whatever leafy veg you're into!) toss together.

  • Step 2

    Pour in the marinated tomatoes, and as much of the oil/vinegar as you'd like. Toss together.

  • Step 3

    Assemble salads on plates/bowls by layering salad mix, and topping with salmon, bacon, croutons and optional a soft boiled egg. Add dollops of garlic aioli, and serve!
