Queso fundido

"Easy, two ingredient queso fundido (molten cheese! does it get any better?) with spicy chorizo. The perfect quick appetizer that literally anyone can make!"

ingredients

  • 1 cup chorizo (I used Trader Joe's soy chorizo)
  • 1 cup shredded Oaxaca or other melting cheese
  • 1 teaspoon olive oil
  • 1 lime, for juice
  • tortilla chips, for serving

Method

  • Step 1

    Preheat oven to 350. In a small-medium cast iron skillet, heat olive oil (if using regular/non vegetarian chorizo.. you can skip this step!)

  • Step 2

    Add chorizo, and cook through. About 5 minutes.

  • Step 3

    Scoop out about a tablespoon of cooked chorizo for garnish.

  • Step 4

    Cover chorizo with cheese. Oaxaca, mozzarella, quesadilla, or Monterey Jack work great for this.

  • Step 5

    Transfer skillet to oven for about 5-7 minutes, until cheese has melted and lightly browned on top.

  • Step 6

    Top with reserved chorizo, and finish with a squeeze of lime (and sliced green onion or cilantro if desired)

  • Step 7

    Serve warm with tortilla chips, warmed flour tortillas, or literally anything else you'd scoop cheese up with!

  • Step 8

    This is *not* a liquid-like queso. More melty, cheese pully style :)
