Blondie base

ingredients

  • 1/2 cup butter
  • 8 oz chopped white bakers chocolate
  • 1/2 cup cane sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 pinch salt
  • 1 1/4 cup gluten free baking flour

Method

  • Step 1

    In a large bowl, melt together butter and white chocolate in 20 second intervals until easily stirred together.

  • Step 2

    Add sugars and vanilla to white chocolate mixture.

  • Step 3

    One at a time, beat in eggs for about 2 minutes to combine well.

  • Step 4

    Add flour and salt.

  • Step 5

    Add to a parchment lined baking dish (deep enough to hold the blondie mix and pecan pie filling)

  • Step 6

    Preheat oven to 400. Set aside until ready to add filling.

Pecan pie filing

ingredients

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup cane sugar
  • 2 tablespoon half and half
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/4 cups chopped pecans (small pieces)
  • 1 pinch salt
  • 1 1/2 tablespoon gluten free baking flour

Pecan pie filling

  • Step 1

    In a medium sized bowl, melt butter. Add sugars, stirring to dissolve.

  • Step 2

    Add vanilla, half&half, and eggs.

  • Step 3

    Add pecan pieces, salt, and flour. Mix to combine well. Pour directly ontop of blondie mixture and bake for 35-40 minutes. Allow to cool for 15+ before slicing and serving.
