Gooey chocolate chip cookies

ingredients

  • 2 1/2 cups fine almond flour (not almond meal!)
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup chocolate chips
  • 1 stick softened butter
  • 1/4 cup brown sugar
  • 1/2 cup white cane sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Method

  • Step 1

    Combine dry ingredients in a bowl (except for the chocolate chips!)

  • Step 2

    In a seperate (larger) bowl, add softened butter and beat in sugars until light.

  • Step 3

    Add egg, and yolk and whisk for about 2 minutes to fully incorporate.

  • Step 4

    Add vanilla, and whisk in.

  • Step 5

    Combine wet and dry ingredients with rubber spatula, or wooden spoon. Don't over mix.

  • Step 6

    Fold in choclate chips. Cover, and refrigerate dough for 1-2 hours, or up to overnight.

  • Step 7

    When ready to bake, preheat oven to 325. If dough chilled over night, remove from fridge while oven preheats.

  • Step 8

    Scoop 1 tablespoon size spoonfulls and round gently in your hands. Place on parchment lined baking sheet 1-2" apart.

  • Step 9

    Bake for 10-12 minutes. Cookie will appear soft on the baking sheet, but will become a little more sturdy as it cools.

  • Step 10

    Top with flaky sea salt, because... it's a must with chocolate!
