ingredients

  • 1 pkg active dry yeast
  • 3/4 cup warm water
  • 1 tablespoons olive oil (plus more)
  • 1 1/2 cups gluten free baking flour
  • 1 teaspoon salt
  • fresh rosemary
  • fresh thyme
  • red pepper flakes
  • 1 tablespoons sundried tomato oil

Method

  • Step 1

    Combine active dry yeast and warm water, let sit for 5+ mintues, until bloomed and fragrant.

  • Step 2

    Mix in gluten free baking flour, salt, and olive oil until dough forms.

  • Step 3

    Knead dough out on floured counter top, and form into a ball.

  • Step 4

    Oil a small cast iron skillet, and your hands. Press the dough ball down to cover the bottom of the pan. Use fingertips to create small indentations in the now flattened dough.

  • Step 5

    Cover with clean kitchen towel, and allow to rise for 1.5 hours, until risen.

  • Step 6

    Preheat oven to 375. Drizzle risen dough with olive oil, sundried tomato oil (about 2 tbs total) and fresh herbs/seasonings. Bake for 30 minutes, broil on low for five until crust is browned and crispy.

  • Step 7

    Serve with oil, vinegar, or butter! (or all of the above!)
