Recipe
- 4 peeled and chopped honey crisp apples
- 1 tablespoon lemon juice
- 1/ 2 teaspoon ground cinnamon
- 1/ 2 teaspoon ground nutmeg
- 1 tablespoon vanilla extract
- 1/ 2 teaspoon kosher salt
- 1/ 3 cup brown sugar
- 1/ 3 cup bourbon
- 1 tablespoon corn starch
- 1 tablespoon warm water
- 6 tablespoons cold butter
- 1/ 3 cup brown sugar
- 3/ 4 cup gluten free baking flour
Method
Step 1
Preheat oven to 350. Place apples in a large, heavy bottomed pot. Add lemon juice, cinnamon, nutmeg, salt, vanilla, and brown sugar.
Step 2
Simmer on low for about 10 minutes stirring occasionally to dissolve sugar.
Step 3
Add bourbon, and continue to simmer for an additional 5-10 minutes to gently soften apples and simmer out the alcohol. (But not evaporate all the liquid!)
Step 4
Whisk together corn starch and warm water, and add to pot with apples. Stir to thicken. Remove from heat after about two minutes.
Step 5
Whisk together remaining brown sugar, and flour in a bowl.
Step 6
Use box grater to shred cold butter. (or dice into small cubes- but the grater works best!)
Step 7
Add butter to flour and brown sugar mixture. Use a pastry cutter (or two forks) to cut butter into flour, until small pea sized pieces form.
Step 8
Add apple mix to 10 ounce ramekins, and top with plenty of the crumble mixture.
Step 9
Bake for 25-30 minutes until bubbling, and crumble is golden brown. Broil on low for 2 minutes if needed.
Step 10
Serve topped with flaky salt, and optional: a drizzle of caramel and scoop of vanilla ice cream!

This will make two small crumbles. Multiply recipe as desired to suit your party!
