ingredients
- 1 pkg gluten free pasta
- 1/2 chopped white onion
- 5 cloves chopped garlic
- 4 tablespoons butter
- 4 tablespoons gluten free all purpose flour
- salt & pepper to taste
- 1 teaspoon onion powder
- 1 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne (optional)
- 2 tablespoons nutritional yeast
- 2 cups cashew milk
- 1/2 cup fresh shredded parmesan cheese
- 1/2 cup reserved pasta cooking water
Method
Step 1
Add package of noodles to salted boiling water, with a dash of olive oil to keep from sticking.
Step 2
Make your roux by adding butter to a hot pan, melt and add diced onions & garlic. Saute until softened. Whisk in flour until well combined.
Step 3
Slowly add 2c. milk (in about 1/4 cup doses) mix until creamy. Add spices, nutritional yeast, salt & pepper, & parmesan cheese. Stir to combine. Continue to add salt & pepper to taste. ((you could use a vegan parmesan cheese if you want!))
Step 4
Mix in the reserved pasta water to thin the sauce a bit. Use an immesion blender, or transfer sauce to regular blender, & pulse until smooth & creamy. Fold in your noodles.
Step 5
Top with extra parmesan cheese, parsley, and any protein you like (or none at all!)
