French Onion Mac' and Cheese

ingredients
- 2 tablespoon butter
- 1 large yellow onion
- 3 cloves chopped garlic
- salt and pepper
- 1 tablespoon fresh thyme
- 1/2 tablespoon chopped fresh sage
- 1/2 cup white wine
- 4 tablespoon butter
- 3 tablespoon gluten free all purpose flour
- 1 1/2 cups half&half, or milk
- 1/2 cup shredded parmesan/asiago
- 1/2 cup shredded mozzarella
- 1 cup shredded gruyere
- 1/2 teaspoon onion powder
- 1/2 teaspoon mustard powder
- 2 cups cooked gluten free noodles
- 4 slices toasted gluten free bread
- 4 slices white cheese of choice (I used meunster)
Method
Step 1
Preheat oven to 350. In a large pot on medium low heat, melt 2tbs butter. Add onion (quartered, and sliced thinly) cook until slightly softened.
Step 2
Add garlic, thyme, and sage to pot. Salt and pepper to taste. Stir frequently, on low.
Step 3
Once onions have a little color, add white wine. Reduce heat to low... stirring frequently until wine has reduced and onions have caramelized. (about 10 minutes) Remove from pot and set aside.
Step 4
In that same pot, melt 4tbs butter. Add gluten free flour and whisk constantly to combine.
Step 5
Slowly in batches stream in half&half, whisking constantly to create your roux. Salt and pepper to taste. Add onion powder, and mustard powder at this point.
Step 6
Turn off the heat, and add cheeses into pot stirring to melt and combine.
Step 7
Fold in cooked noodles, (my favorite gluten free noodles are "Tinkyada" brown rice fusili.) and half of the onion mixture .
Step 8
Butter 4 ramekins (or one baking dish) add macaroni into each dish.
Step 9
Top with remaining onion mixture, a piece of toasted bread, and a final slice of (or remaining shredded) cheese. (my favorite gluten free bread is Canyon Bakehouse)
Step 10
Bake for 20-25 minutes until golden browned. Use broiler on low for 2 minutes if needed.
Step 11
Serve garnished with additional fresh sage, and thyme if desired.
