Buffalo Chicken Taquitos

ingredients

  • 2 chicken breasts
  • Salt and pepper to taste
  • 5 tablespoons butter
  • 5 tablespoons hot sauce
  • 2 tablespoons honey (or hot honey)
  • 1/2 cup shredded cheddar cheese
  • 8 corn tortillas

Buffalo Chicken Taquitos

Method

  • Step 1

    Bring a pot of water to boil (enough to fully cover the chicken breast) Season chicken with salt and pepper, add to boiling water with a splash of olive/vegetable oil to prevent over boiling.

  • Step 2

    Once cooked through to 165 degrees, remove chicken from pot and shred using two forks. Drain water from pot.

  • Step 3

    On medium low heat, \melt butter, add hot sauce. (start with equal parts of each, and adjust to desired level of heat) Add honey. Return chicken, and toss to coat in sauce. Add cheddar cheese, and fold to melt. Preheat oven to 350.

  • Step 4

    In a separate pan,, one at a time warm corn tortillas gently. Once warmed, rub olive oil on both sides of each tortilla (this guarantees crisp taquitos! don't skip this step!)

  • Step 5

    Once each tortilla is oiled, add filling to center and roll your taquitos. Place seam side down on a parchment lined baking tray. Bake for 8-10 minutes per side, flipping once to get color on both sides.

  • Step 6

    Broil on low for 2 minutes for extra crunch.

Celery Slaw

ingredients

  • 1/2 bunch celery hearts
  • 1/2 small red onion
  • 1 1/2 teaspoon white wine vinegar
  • 2 tablespoon mayonnaise
  • salt and pepper

Celery Slaw

  • Step 1

    Finely slice red onion, and chop celery to desired thickness.

  • Step 2

    Add salt and pepper, vinegar, and mayo to a bowl. & Fold to combine.Taste and adjust all ingredients to taste as needed.

  • Step 3

    Set in fridge until ready to use.

Bleu Cheese Crema

ingredients

  • 8 ounces sour cream
  • 1 lime
  • 3 tablespoons crumbled bleu cheese
  • salt and pepper
  • 1 large clove garlic, crushed or finely minced.

Bleu Cheese Crema

  • Step 1

    Add lime juice and crushed garlic to sour cream. Mix to combine well.

  • Step 2

    Add salt and pepper, and bleu cheese. Fold to combine.

  • Step 3

    Set in fridge until ready to use.

Finishing Touches

  • Step 1

    Once taquitos are removed from oven, top with celery slaw, and drizzle additional buffalo sauce, and crema on top. Use anything you have left in small side dishes for dipping and dunking. Crumble additional bleu cheese on top. Enjoy!

    (if you DON'T like bleu cheese, omit that in the recipe! it will be equally as delicious without it!)

  • Step 3

    Crema will keep for a week sealed tightly in the fridge for future dunking needs!
