Apple layer

ingredients

  • 3/4 cup brown sugar
  • 1/4 cup butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • a pinch of salt
  • 2 peeled sliced apples

Method

  • Step 1

    In a small sauce pan, combine all ingredients besides apples. Cook over medium low until thickened. About 2 minutes. Preheat oven to 350, and grease a cake pan with vegetable oil.

  • Step 2

    Pour brown sugar mixture into cake pan, and arrange apple slices. A little overlapping is okay.

Cake

ingredients

  • 1 3/4 cups gluten free baking flour
  • 3/4 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon allspice
  • 1/2 cup softened butter
  • 1 cup cane sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup half and half

Cake

  • Step 1

    Whisk together dry ingredients in a medium bowl. set aside.

  • Step 2

    With a hand mixer... cream together sugars and butter until fluffy. Add eggs, one at a time.. whisking for about two minutes each. Add vanilla.

  • Step 3

    Whisk in half of the dry ingredients until just combined. Then add half and half.

  • Step 4

    Add remaining dry ingredients, and whisk until well combined. (If you're using regular flour, just combined is fine.. I like to whisk extra using gluten free flour to incorporate more air into the batter and assist with rising.

  • Step 5

    Pour over apples in cake pan. Bake for 55-60 minutes, until toothpick comes out clean from center of cake. Allow to cool for 15 minutes in the pan.

  • Step 6

    Place serving tray, or cutting board on "top" of cake. Flip, to expose apple layer.. the "new top" of the cake. Allow to cool while you make the maple caramel.

Maple caramel sauce

ingredients

  • 3 tablespoon brown sugar
  • 4 tablespoon butter
  • 1 tablespoon maple syrup
  • 1/4 teaspoon ground cinnamon
  • a pinch of salt

Maple caramel sauce

  • Step 1

    Add all ingredients to a small sauce pan. Bring to a simmer over medium low heat. Stir frequently.

  • Step 2

    Remove from heat once simmering, and repeat until sauce is thickened. Allow to cool slightly.

  • Step 3

    Pour over apple upside down cake. And enjoy.
