ingredients
- 1 slice sourdough bread, toasted
- 2 cups fresh spinach
- 1 cup sliced white button mushrooms
- 1 tablespoon avocado oil
- 1 large egg
- 1/2 avocado, mashed
- Sprinkle of red pepper flakes
- Sriracha, as garnish
Method
Step 1
Heat a pan on the stove over medium heat. Add 1 tsp oil and saute the mushrooms and spinach until soft and whilted. Set aside.
Step 2
To make the sunny-side-up egg, add remaining (2 tsp) oil to the hot pan, over medium-high heat. Crack the egg into the pan. Sprinkle with salt and pepper. Cook for 2-4 minutes.
Step 3
Layer the toasted sourdough bread with mashed avocado, sauteed spinach and mushrooms and the egg. Sprinkle with red pepper flakes and drizzle with sriracha.
