Avocado Egg Sourdough Toast with Sautéed Mushrooms and Spinach

  • 1 slice sourdough bread, toasted
  • 2 cups fresh spinach
  • 1 cup sliced white button mushrooms
  • 1 tablespoon avocado oil
  • 1 large egg
  • 1/2 avocado, mashed
  • Sprinkle of red pepper flakes
  • Sriracha, as garnish


  • Step 1

    Heat a pan on the stove over medium heat. Add 1 tsp oil and saute the mushrooms and spinach until soft and whilte​d. Set aside.

  • Step 2

    To make the sunny-side-up egg, add remaining (2 tsp) oil to the hot pan, over medium-high heat. Crack the egg into the pan. Sprinkle with salt and pepper. Cook for 2-4 minutes.

  • Step 3

    Layer the toasted sourdough bread with mashed avocado, sauteed spinach and mushrooms and the egg. Sprinkle with red pepper flakes and drizzle with sriracha.
